<p>The New York Times today declared Birmingham UK to be the 19th most desirable places to visit &#8216;in the Universe&#8217; - beating outer space! (at number 20) - largely down to Birmingham&#8217;s food pedigree, as highlighted in Olive Magazine in 2011, as Britain&#8217;s food capital. It also highlighted some of our top chefs including Akar Islam, <a href="http://www.eat-the-midlands.co.uk/chef-profiles/andreas-antona-patron-simpsons-beef-restaurant/">Andreas and Luke of Simpsons</a> Restaurant,<a href="http://www.eat-the-midlands.co.uk/chef-profiles/michelin-chef-richard-turner-turners-restaurant-birmingham/"> Richard Turner of Turners Restaurant,</a> Steve Love and Andy Waters of Edmunds Restaurant - well done all. With the recent additions of <a href="http://www.eat-the-midlands.co.uk/chef-profiles/">Marco Pierre White</a>, and Jamie Oliver, the city and region are set to grow throughout 2012. Could England’s second city be first in food? </em></p>
<p>Olive, the BBC’s food magazine, recently startled British gourmands when <a href="http://www.bbc.co.uk/mediacentre/worldwide/051011birmingham.html">it declared</a> Birmingham, England’s second largest city, the United Kingdom’s  “foodiest town,” ahead of London and Edinburgh. The award came last  October, just as Birmingham was hosting an annual festival, the 10-day <a href="http://birminghamfoodfest.com/">Birmingham Food Fest</a>, which featured such local talents as Aktar Islam of <a href="http://www.lasan.co.uk/">Lasan Restaurant</a>; up-and-comers like David Colcombe of <a href="http://www.opusrestaurant.co.uk/">Opus</a>, Andy Waters of <a href="http://www.edmundsrestaurant.co.uk/">Edmunds Restaurant</a> and Steve Love of <a href="http://www.loves-restaurant.co.uk/">Loves Restaurant</a>; and a troika of Michelin-starred chefs: Glynn Purnell of <a href="http://www.purnellsrestaurant.com/">Purnell’s</a>; Andreas Antona, Luke Tipping and Adam Bennett of <a href="http://www.simpsonsrestaurant.co.uk/">Simpsons Restaurant</a>; and Richard Turner of <a href="http://www.turnersofharborne.com/">Turners of Harborne</a>.</p>
<p>The chefs are building on an already rich dining scene. <p>Shropshire based Bespoke Seating Supplier Supplies Closer to ‘Home’</h2>
<p>2012 looks to be an exciting year for Successful National supplier to many of the UK’s finest Hotels and Restaurants has recently expanded into the domestic market, due to demand from diners.<br />
Telford based ‘The Chair People’ who supply bespoke seating throughout the UK, this month launched their new @home service – creating the opportunity for home diners to generate their own creations from any fabric, and apply it to any style of chair – for either dining or relaxation, from their thousands of styles and fabrics. “It’s as easy as one two three”, comments Director Karl Owen, “we have been supplying bespoke pieces to the hospitality industry<span id="more-3533"></span> since 2004, and therefore have to create quality long lasting furniture,  as obviously businesses such as restaurants and hotels experience high usage of their furniture, but increasingly we were being approached by diners, who had enquired in their favourite restaurant or hotel where certain items were supplied from, and who wanted something similar in their own home.”  Karl continues “With the trend of more home dining as peoples budgets are being squeezed, they now prefer to invest the money in quality furniture that will last them a long time, and to save money by entertaining friends at home”.<br />
The Chair People have created a dedicated area on their extensive website for potential domestic customers to brows fabrics, colours and chair styles to create their own and order on line, or if they prefer a more personal touch, they can visit the showroom on Halesfield in Telford, where Karl’s  domestic team, headed up by Samantha Antonic (pictured with Karl) can talk them through all the options, and bespoke any item for them, in a very easy process. Sales executive Samantha Antonic (pictured) comments “We have offered a very simple process for busy restaurateurs and hoteliers to use, when choosing their preferred styles, and fabrics, so we thought it sensible for the same tried and tested system to be adopted for our domestic customers – they can even bring in their own fabric, and if available, we can match it to suit any chair style”<br />
Delivery within the month! Certain styles can even be manufactured from order to delivery within four weeks “sometimes customers want a particular chair for a restaurant or hotel opening, and often leave it to the last minute, so we can supply many items within four weeks” Karl comments “I am sure our home customers will be planning parties and events at short notice and will want to benefit from the same rapid service, we will have to see”<br />

<p>Clutching a string of awards for her innovative, creative and authentic cooking - self taught Suree Coates (pictured) who presides in the King and Thai Restaurant, in Broseley, just outside Ironbridge in Shropshire this year won &#8216;<strong>Best Curry Chef of the Year</strong>&#8216; and was commended as Best Thai Restaurant, alongside high praise from her regulars on many of the dining guides - &#8220;We have had a wonderful year&#8221; comments Suree &#8220;Although we have been in Shropshire for over 7 years, enjoying some wonderful comments from our regulars, since we moved to the larger premises up the road when we took over the Forester Arms in Broseley, we have received National recognition too, which is wonderful.&#8221;</p>
<p>Suree was nominated for Thai Curry Chef of the Year&#8217; at the  <a href="http://www.asiancurryawards.com/" target="_blank">National Asian Curry Awards</a> which are designed to recognise <span id="more-3446"></span>and reward excellence across the whole Asian  dining sector in the UK. The awards went to the establishment or person  who, in the eyes of the panel of expert judges, had made an exceptional  contribution to the UK curry industry, and was awarded by Lord Bradford, who is a very keen promoter of UK dining and supporting UK and Asian chefs. The King and Thai were also commended  as Best Restaurant in Shropshire by Beacon Radio.</p>
<p>This New Years Eve will be a celebration of this years success, and a thank you to all Suree&#8217;s regulars &#8220;We want to thank all our customers for their support and kind words this year, inviting them all down to enjoy our award winning menus, with no extra charges, or entry fees, just the same great value, and look forward to a prosperous New Year and new menu with them early 2012&#8243;</p>

<p>Owner of the Lion Hotel in Shrewsbury, (Howard Astbury pictured left) who has left hundred&#8217;s of local suppliers unpaid, since he took over 5 yeas ago, has been forced to go into Voluntary Receivership, after building up debts of over £100,000. It was reported on Boxing Day on the font page of the local paper, the Shropshire Star that receivers had moved in to work with Mr Astbury to ensure that over 90 suppliers are paid for the proceeds of the 2.9M sale of the hotel.</p>
<p class="MsoNormal">It was reported that MCR Corporate Restructuring said the business would continue as normal and it was working with Mr Astbury to realise as many assets as possible. A letter sent to creditors by MCR Corporate Restructuring reveals a total of 33 organisations in Shropshire, and 90 overall, are owed a combined total of about £103,000.</p>
<p>Among the local creditors owed money are the hotel’s Wyle Cop neighbours Tanners Wines, which is owed £12,950; the Three Tuns Brewery in Bishop’s Castle which is owed £989; and Shrewsbury-based Cottesw- old Dairy Ltd, which is owed about £831. Others include Lyreco in Telford, which is owed about £763, and The Wood Brewery in Craven Arms, which is owed £676. Nationally BT is owed £661, Severn Trent is owed £2,194 and Npower is owed £111, alongside an undisclosed figure owed to locally based Midlands restaurant marketing company Leisure Marketing Midlands LTD who provided services to the hotel.</p>
<p class="MsoNormal">
In a letter to creditors John Whitfield, from MCR Corporate Restructuring, said: “Howard Astbury is<span id="more-3442"></span> intending to make a proposal under section 253 of the Insolvency Act 1986 for an Individual Voluntary Arrangement to his creditors.” Richard Merrin, a spokesman for MCR Corporate Restructuring, said that a creditors’ meeting will be held on January 9, where creditors will vote on whether to accept the proposals.</p>
<p>James Day, Director of Shropshire based <a href="http://www.leisuremarketingltd.co.uk" target="_blank">Leisure Marketing Midlands LTD</a> who carried out works for The Lion Hotel, and is owed an undisclosed figure added &#8220;We had worked with Howard over recent years, advising on his restaurant, hotel and beauty salon marketing, and he operated the successful &#8216;Chefs Table&#8217; concept at The Ludlow Food Festival for 2 years, on behalf of our clients Gourmet-Life.co.uk Dining Club, but Howard became unable to pay any of the bills due, despite good results. We personally honoured the monies owed to the suppliers on behalf of the Lion Hotel from the Ludlow Food Festival concept,  but have been warning our suppliers, and other customers  about Howard&#8217;s tactics for some time, alongside his low opinions of the needs of suppliers. &#8221; James added  &#8220;It is a sorry state of affairs that individuals such as this can operate in such a  way, thinking that a smaller supplier cannot fight for what monies are due, but reassuring to see that the system protects such producers by operating such arrangements to ensure they are paid - personally I think all smaller suppliers should insist on payments if debtors go outside the pre-agreed terms, as in this climate we cannot afford to carry the debts of others - we, alongside all the other creditors I am sure look forward to retrieving the monies due.&#8221;</p>
<p>Mr Astbury said he did not want to comment.</p>

<p>Chef Marco Pierre White recently joined us for a chat about his new Restaurant in Birmingham, now open at the top of the Cube - While chatting with Marco, he gave us some tips on his perfect turkey.</p>
<p>&#8220;It&#8217;s simple&#8221; says Marco &#8220;It&#8217;s all about good quality meats, cooked simply - you should not mess too much with ingredients. In our restaurant we source the finest meats, and just cook them simply the traditional ways, and a turkey is no different. I would recommend you buy a smaller bird if possible, around 10lb - 12lb, which also saves on wastage.Then, remove the legs and wings to be cooked separately - its the density of these which slows down the cooking time, and often results in the breasts being dry. Slow cook the thighs in the oven around 72 degrees, and the wings at around 62 degrees - or thighs top, and wings bottom of the oven - the turkey crown can then be stuffed and cooked at around 200 degrees for 2 hours. Bring it out of the oven, and allow to rest for an hour, then put back in on a higher heat for around 40 minutes. Once again, allow it to rest, so the meat relaxes and the juices go back into the bird. Then serve with all the trimmings, including roast potatoes, cooked in goose fat - there is not better way to cook them.&#8221; <a href="http://www.eat-the-midlands.co.uk/chef-profiles/">Read more on Marco Pierre White&#8217;s exclusive interview.</a></p>

<p>Yesterday (10 December) a group of award-winning caterers launched Five Rivers à la Carte; a new fine-dining north Indian restaurant.</p>
<p>The owners are also behind <span id="more-3410"></span>successful outdoor catering business Five Rivers Group, who deliver innovative event catering with distinctive North Indian cuisine.</p>
<p>Managing Director, Kindi Sunner is looking forward to expanding the business, he said: “Our reputation in outdoor catering twinned with our ambition to expand has meant that we are able to turn our dream of a restaurant into reality.”</p>
<p>Five Rivers has an established reputation working with large local venues including The Belfry in Sutton Coldfield and The National Motorcycle Museum in Coventry.</p>
<p>Executive Chef Rashpal Sunner, who after perfecting his culinary skill in India, revolutionised how Indian cuisine was delivered at large scale events and celebrations.  He won ‘Ethnic Chef of the Year&#8217;, and is very proud of his achievements.</p>

Originally from Solihull, 37-year-old Matt has an impressive CV, most recently executive head chef at Urban and Country Leisure, and before that at Lazy Cow, The Huff Cap in Great Aln, The Baraset Barn, when it was voted Midlands restaurant of the year, and Nuthurst Grange in Warwickshire.<br />

<p style="text-align: right;"><strong>Why did you decide to become a chef?</strong></p>
<p style="text-align: left;">Like many teenage boys my passion was football but my dreams of playing for Villa ended with a broken leg. I grew up helping on my dad’s pig farm, collecting waste food from around the city and feeding the 800 pigs which gave me a real understanding and appreciation of farming and of meat.</p>

<h4>Michelin-starred Birmingham chef Richard Turner will make his bid to create Britain’s Best Dish when he cooks for an audience of millions on Monday. (December 5)</h4>
<p>Richard Turner, who runs <a href="http://www.turnersofharborne.com/" target="_blank">Turners Restaurant</a>, in Harbourne, will battle it out in front of Ed Baines, Jilly Goolden and John Burton Race.</p>
<p>He hopes to impress the three hard-to-please judges so that he can win a place in the Grand Final. However, he faces a tough challenge because the series has featured some of the best chefs in the UK, many of whom have Michelin stars.<br />
Richard Turner said: “Appearing on Britain’s Best Dish marks something of a departure for me because I very rarely step out of the kitchen.<br />
At Turners, the food comes first: all day and every day. However, <span id="more-3355"></span>we were asked to feature in the present series of Britain’s Best Dish, without affecting service to our customers,  and I hope the judges and the public will enjoy my food.”<br />
The show is presented each week night at 5pm on ITV1 by Mary Nightingale and chefs from across the country battle it out in a series of keenly contested cooking duels to find out who has the Best Main Course and the Best Pudding.<br />
Regional winners are entered into the national finals where they will be pushed to their limits as they take on the fight of a lifetime. The pressure mounts as the chefs’ reputations – and the restaurants they represent –battle it out for one the most coveted accolades in cooking.</p>
<p>Monday starts the ‘Midlands Heats’ showing all week, and also features Birmingham Chefs Andy Waters of <a href="http://www.edmundsrestaurant.co.uk/events-at-edmunds.html">Edmunds Restaurant</a>, and Steve Love, of <a href="http://www.loves-restaurant.co.uk/">Loves Restaurant</a>. It promises to be a gripping weeks’ viewing.</p>
<p>The competition culminates in a nail-biting grand final that sees the talented chefs face the ultimate test – cooking for the expert judges and a 100-strong studio audience to prove they have the Best Dish.</p>

<h3>New Birmingham Hotel, and Restaurant by Marco Pierre White.</h3>
<p>A major new hotel and restaurant development opens in Birmingham today promising to reshape the city’s leisure landscape.</p>
<p>The £13m flagship site features a skyline Marco Pierre White eatery, upscale Hotel Indigo and Laurent Perrier champagne bar on the top three floors of The Cube, an impressive 25-storey building on Commercial Street in the city centre.</p>
<p>The launch marks the completion of a 26-week build programme on the 1,319m2 restaurant, situated on the 25th floor, and 52-bedroom hotel on levels 23 and 24.  A luxury Club &amp; Spa health resort and private members club will join the development, which also boasts a salon by celebrity stylist Adee Phelan, early next year.</p>
<p>Such has been the level of interest in Marco Pierre White Steakhouse Bar &amp; Grill and Hotel Indigo, both operated by <span id="more-3402"></span>Sanguine Hospitality, that the restaurant is sold out for dinner every night for the first two weeks and the hotel has already achieved full occupancy on many dates into next year.</p>
<p>Nick Taplin, managing director of Sanguine Hospitality, said: “When we set out on this journey, we knew we had the opportunity to deliver something very special. Looking around now, I think we can say with confidence that we have achieved our goal.</p>
<p>“The scale of our investment and the calibre of venues we are bringing to Birmingham aim to provide a defining shift in how people spend their free time. Demand for Marco’s restaurant and Hotel Indigo has already exceeded our expectations, with many nights sold out, and this gives us great encouragement as we move forward with our plans.</p>
<p>“I was astounded to discover that Birmingham did not already have a sky bar or rooftop restaurant, given the range of magnificent buildings in the city. We have definitely redressed this now.</p>
<p>“The Cube is a stunning addition to Birmingham’s skyline and we are confident that we have delivered an equally stunning, upscale leisure offer for residents and visitors alike. Now the hard work really begins to ensure we give each of our guests an unforgettably high level of service.”</p>
<p>The 300-seat Marco Pierre White restaurant will offer panoramic views of the city and feature a sky bar with open air terrace, private lounge and dining rooms, as well as the Laurent Perrier champagne bar, the French company’s first in the UK.</p>
<p>Neil Edginton, director at The Cube, said: “The Cube has already made a name for itself as an iconic building and landmark destination at the heart of Birmingham as over the past 12 months our vision for this unique venue has come to life.   Marco’s restaurant and the boutique hotel represent The Cube’s crowning glory and alongside Adee Phelan’s salon, bring a whole new dimension to our canalside location, which offers an exclusive city centre living experience.</p>
<p>“The launch brings a huge boost to the city just before Christmas, both for its residents and for tourists visiting the Midlands and we’re eagerly anticipating the launch of the Club &amp; Spa in the new year.”</p>
<p>Mark Nesbitt, general manager of Hotel Indigo, said: “The level of demand has been astonishing. I felt when I came here that the venues would be a popular addition, but we have actually created a new destination.  This is very much the place to be – and we haven’t even opened yet.</p>
<p>“The team is all in place and they can’t wait to welcome our first guests.”</p>
<p>Meanwhile, Hotel Indigo Birmingham is set to become the pinnacle of luxury accommodation, marrying the intimacy of a boutique hotel with the flexibility of a major hotel brand.
