San Carlo team up with Aldo Zilli

Celebrity chef Aldo Zilli brought his own ‘taste of Italy’ to Birmingham on a whistle stop visit to the city’s highly acclaimed restaurant ‘Fumo’ in Waterloo Street.

He joined proprietor Carlo Distefano to sample one of his signature dishes at the popular venue which serves Italian tapas known as ‘Cicchetti’ – small dishes of freshly prepared food typically representing the many regions of Italy.

Aldo has teamed up with San Carlo Group, which owns Fumo, as a consultant chef, bringing his great love of Italian food to the family business founded in Temple Street in 1996.

Aldo said: “This is my favourite kind of food – uncomplicated and totally delicious. Working with such a professional restaurant group allows me to express my passion and expertise and I am very proud to be involved with Carlo who I have known for many years.”

Popular Cicchetti dishes include Melanzane Parmigiana, Classic Sicilian – Layers of aubergine, parmesan and tomato baked in the oven; Gnocchi Gorgonzola in a baked parmesan basket; Pizza Calabrese with N’duja calabrian soft spicy sausage and buffalo mozzarella and Fritto Portofino – deep fried prawns, scallops and calamari served with garlic alioi and spicy calabrian dip.

San Carlo Group, famous for its high profile celebrity diners, now operates 12 authentic Italian restaurants throughout the UK as well as an international portfolio of restaurants under its Signor Sassi brand including Kuwait, Beirut and Bangkok.
