Shropshire Chef Triumphs in International Award

A Shropshire chef triumphed once again this week with a profile award going to a Thai Chef Suree Coates from Broseley at this weeks prestigious “Hotelympia” trade competitions held in London.

Self taught chef Suree Coates from the King and Thai Restaurant in Broseley, Shropshire, was entered into the prestigious ‘Chef of the Year’ award, sponsored by Tilda rice. Competition was tough with entrants from The Savoy Hotel, as well as top chefs flying in from Dubai to compete for this prestigious award. Chef Suree has been practising in recent weeks, with some support from some of the Midlands Michelin accredited chefs, but she ensured that the dishes entered were reflective of the much loved food she already serves in her award winning Shropshire restaurant “I wanted to ensure that the dishes I prepared reflected my true cuisine, using fresh local ingredients, and fresh from Birmingham market – considered to be some of the freshest in the Uk – we called in to the market en route to London to pick up my key ingredients, beautiful fresh Monkfish, and tiger prawns – it certainly gave my main course the edge. The dessert was down to my own style and creativity, all contributing to my award”.

Chef Suree achieved a Bronze accreditation highlighting the excellence and high standards of her dishes, rarely awarded, with her main course of traditional Thai green curry, with monkfish and tiger prawns, served with wild basmati Tilda rice, and for dessert Tropical Fruit Brochette with coconut Tilda Rice pudding & Thai Spice Sabayon, Arborio Basmati & Wild Tilda Rice. Judges commended the freshness of Chef Suree’s ingredients and depth of flavour, awarding the prestigious Bronze recognition in international standards.

James Day of Bridgnorth based www.leisuremarketingltd.co.uk who supported Chef Suree and attended the competition commented “This has been a real journey for Chef Suree, and a challenge, but the results speak for themselves. Suree did an amazing job, and the region should be very proud”. Suree added  “This has been an amazing experience for me. Being asked to enter this prestigious competition, and being up against such experienced and acclaimed chefs was really daunting, but thanks to the advice and support I received from fellow chefs from the Midlands and my team was a real boost, and goes to show how self belief can help you push, and we can compete on a National stage from this region. It makes me so proud”

Chef Suree will be serving her award winning menu from Friday in her restaurant, and will be visiting Birmingham fish market to stock up on fresh monkfish and prawns “the bookings are already flooding in, so I hope I can pick up enough fresh fish to keep up with the demand”
