Perfection can only be achieved through hard work, as many of our regions finest chefs will testify.

In recent years we have been told to look out for young up and coming chefs like the passionate Andy Waters of Edmunds and now his protege Aaron Darnley, and the creativity of Glynn Purnell, pushing the boundaries,  as well as Brad Carter of Carters of Moseley, to name but a few of Birmingham’s favourite chefs, but make a note, and spread your net a little wider, into the deeper waters of the Border counties and you may find Chefs like Will Holland of La Becasse with his love of local produce, and an as yet undiscovered chef, known only to locals in the know, and those who travel from as far afield as Manchester, North Wales, and even Bristol, as “Suree”.

Suree Coates is the Executive Chef of the wonderfully named King and Thai, located in a converted pub just outside Ironbridge (from where she used to be located) on the outskirts of a once industrially gentrified village called Broseley. The village appears as unassuming as Suree, but underneath there is a hard working passion to be the best, and to excel in everything she does. Self taught, Suree creates some of the most intriguing, intense and creative dishes in the region, alongside her unrivalled desserts, in our opinion and those of her regulars, rivaling many of the regions greats, but who remains in awe of what she calls ‘proper chefs’.

Suree’s passions start with the produce and work her way into the kitchens – Sourcing regional meats, from local award winning butchers, as well as produce from suppliers, and specialists who have helped Suree ensure she has the freshest ingredients possible, key to the success of true authentic Thai food – her spices and herbs are sourced from suppliers in Thailand, many of them family, who help ensure her dishes retain the true authenticity of her home country.

we eat all types, so we ensure that where we can we source sustainable fish in the UK, which many restaurants don’t use, but I love creating dishes with fish with deep flavour, and they go so well with Thai spices and marinades”.

This Valentines weekend is of no exception…or is it? Rather than create an often overpriced fixed menu, creating an awkward game of ‘how much do you dare to spend on me…?’ v. a menu which often really is not worth half what the price tag indicates, served in restaurants full of tables of two, often sitting in silence all across the land – Suree is simply offering the same simple, but at the same time incredible Thai a la carte  menu, with a wide range of individually priced starters from £4.95 to £6.95, ranging from the traditional alongside the experimental, followed by mains such as her ‘weeping tiger’ of fillet beef marinated in her secret spices, fresh chillies and coriander, which range from £8.95 to £17.45, but for those who enjoy two courses of her a la carte cuisine, which is no torture we can testify, she will create an assiette selection of her amazing desserts, with 4 to share, for just £14 per couple.

“We don’t have Valentines as such in Thailand, but to me Valentines is about bringing out the senses of love, emotion, sharing and of course a little laughter, and great taste. Our regulars often chat all night about the flavours and sensations they experiences when dining with us, there is very rarely a quiet table. Our menu offers all those senses and emotions, and what better way than to indulge in what is often the second love of any woman (after the man she is with!), that is wonderful desserts” comments Suree. “I have created a dessert selection with a fusion of light and dark chocolate as well as refreshing citrus and cream specials, each lovingly prepared, and decorated by hand, for each couple to enjoy – there is something for everyone, and I suspect not enough for all – my customers always want more!” She adds, “What better value than a wonderful healthy meal, beautiful desserts and a hand made gift for the lady to take home” adds Suree.
